Convenience is the name of my game, without sacrificing health of course. With fall FINALLY in the air I am seeking out pumpkin recipes, or they seem to seeking me out as I come across them everywhere. When I find a recipe I like, I usually modify it to make it even simpler then it was originally intended because recipes with tons of ingredients and prep work just are not my jam.
If you take the pie out of pumpkin pie, pumpkin is quite healthy as it is high in fiber, vitamin A, with more potassium than a banana. Here is a quick and easy snack I use as a dip for apple slices.
- 1/2 cup of greek yogurt
- 1/2 cup of pumpkin puree
- 1 TBSP of maple syrup (or low calorie sweetener like stevia or truvia).
- 1 TBSP of almond butter or peanut butter
- A sprinkle of cinnamon, nutmeg and pumpkin pie spice (if you have it).
- Mix together and uses sliced apples to dip with.
